Spicy Shrimp(Prawns) Curry




Farm raised Shrimp(Prawns) – 1Lbs
Cooking Onions – 2 Cups – chopped Nicely
Tomatoes – 1 Cup – Chopped Nicely
Fresh Cilantro Leaves – 1 Cup
Fresh Mint leaves – 1 Cup
2Tblsp – Sunflower/Cooking oil
1 Tblsp – Ginger-Garlic Paste
1tsp – Turmeric Powder
2tsp – Red chilli powder
2tsp – Coriander Powder
1tsp – salt
1cup – water

Method –

-Heat oil in a thick bottomed pan.
-Add onions and saute till they turn light brown. Add tomatoes and cook for a few minutes, till tomatoes turn soft and mushy.
-Add ginger garlic paste and stir and close the lid.Cook for 5 minutes.
-Then add cilantro and mint leaves and cook for 10 minutes till the leaves get cooked well.
-Add salt, turmeric, red chilli and coriander powder. Mix well and cook for 5 minutes.
-Now,add shrimp and water. Mix well and close the lid.
-Cook on medium heat for 15 minutes.
-Taste and add salt as needed. Cook without lid till gravy becomes thicker for another 15 minutes.

Serve hot with Rice, Roti(Indian Flat Bread) and Dosa (Lentil Pancakes).


Onion Chicken Spicy Gravy


  • 2Tblsp – Sunflower/Vegetable Oil
  • 500gms (1lb) – Onions Chopped
  • 500gms (1lb) – Chicken cut into pieces
  • 100gms (0.2lb) – Tomatoes chopped.
  • 2Tblsp – Ginger-garlic Paste
  • 2tsp – Salt
  • 1tsp- Turmeric Powder
  • 3 tsp-Red Chilli Powder
  • 2tsp – Coriander Powder
  • 1tsp – Garam masala Powder(Optional)
  • 2 Cups Water



  • Heat oil in a stock pot or a deep bottomed pan.
  • Add onions. Fry for at least 30 to minutes, till they turn brown and start becoming thick.
  • Add Tomatoes and close the lid. Let it cook for 5 to 10 minutes.
  • Then add ginger garlic paste. Stir well and cover and cook for 5 minutes.
  • Add salt, turmeric powder, red chilli powder and coriander powder. Mix well and cook till tomatoes turn soft and mushy and the gravy starts becoming thicker.
  • Once oil starts seeping out to the top, add chicken pieces. Add 2 cups water, mix once and cover the pan/pot.
  • Cook closed on medium heat for 15 minutes.
  • Once water starts boiling, remove lid and cook till chicken is tender. Taste and adjust salt and Red chilli powder if required.
  • Cook till all water evaporates and oil seeps out on top.
  • Serve hot with Rice, Roti or Biryani.

Apple Upside Down Cake

Easiest Apple cake I ever made-

For the Batter-
2 Cups – All purpose Flour
1 Cup – Sugar
11/2 Cup – Butter
1/2 Cup – Milk
4 Eggs
2 Tblsp – Vanilla Extract
1 tsp – Baking Powder
3/4 tsp – Salt
For Apple Glaze
3/4 Cup – Butter
1/4 Cup – Sugar
3 Medium Sized Apples peeled and thinly sliced into pieces.
-Make Sugar Glaze-In a pan, on medium to low heat melt the 3/4 cup butter and add 1/4 cup sugar. Stir till sugar melts and switch off flame, but keep the pan on the stove.
-Peel and cut apples into very thin slices.Remove seeds.
-Make the batter- Mix Butter and Sugar in a bowl. In a separate bowl, Mix flour,baking powder, salt, Eggs, Milk and Vanilla Extract. Add this to the sugar-butter mxture and mx till smooth.
-In a 9″ or 10″ inch pan, pour Glaze. Arrange the apple slices all over the pan Arrange them as close as possible. Then pour batter over this, and spread evenly.
-Preheat oven to 350F and bake for 40 to 50 minutes. Switch off oven and leave the pan in for 10 more minutes.
-Remove the pan and invert onto a plate.

Cauliflower-Carrot Rice

A very healthy lunch idea. This is very easy and simple to make. Its a healthy and filling lunch for days when there is nothing much left in the house to cook. Here, I have used cauliflower and carrot. You can use any vegetables you want. Some of the good choices are beans, peas, mushrooms or even broccoli.

Ingredients –
1 Medium Sized Onion
1 Cup Cauliflower Florets(washed)
1 Cup Carrot (washed and cut into small pieces)
1 1/2 Cup Brown or White Rice
1 tblsp Ghee
1 tblsp Ginger-Garlic Paste
4 to 5 Green Chillies Chopped
1 tsp Cardammom
1 tsp Cinnamom
2 Cinnamon Sticks
1 tsp Salt
1 tsp Turmeric Powder
2 tsp Coriander Powder
1 tsp Chilli Powder
3 Cups Water

Method –
1.Wash and soak rice in water and keep aside.
2.In a pressure Cooker, on medium heat add Ghee and when it melts, add cardamom, cinnamom and cinammon sticks and saute for a few seconds. Add onions and green chillies and saute till onions turns brown. Add ginger garlic paste and saute for a few more minutes.
3.Add salt, turmeric, chilli powder and Coriander powder and cook for a minute.
4.Add cauliflower and carrot and 1 cup water and cook for 15 minutes.
5.Now, drain and add rice.
6. Add 2 cups of water and cook for another 15 minutes.
7. Taste the water and adjust salt and chilli powder as needed.
8. Close the pressure cooker and cook for 3 whistles.

Once pressure is down, open and serve hot with either boiled egg or Yogurt Salad(Raitha).

Deep Fried Bananas

This a very simple south Indian sweet called “Panniyaram” . You can make this in minutes and can be served as a healthy snack.

Ingredients –
1 Cup – All purpose flour
2 Extremely Ripe Bananas
1/2 Cup – Sugar
1 Egg
1 tsp – Vanilla Essence (Extract)

1.Mix all ingredients together till smooth. Use hand to mix them together instead of electronic mixer.
2.Heat oil in a pan. When oil is hot enough, drop a little batter into the oil, If it sputters, then oil is hot enough.
3.Take a spoonful or handful of batter and drop it in oil gently. Fry till golden brown on both sides.
4.Serve hot.

My Finest Chocolate Cake

Ingredients –

1 Cup – All Purpose Flour(Maida)
1/2 Cup – Drinking Chocolate Powder
1 Teaspoon – Baking Powder
1/4 Teaspoon – Salt
1/2 Cup – Butter
1 Cup – Sugar
2 Eggs
1/4 Cup – Cooking Oil
1/2 Cup – Milk
1 Teaspoon – Vanilla Essence
1/2 Cup – Assorted Nuts(Almonds, Walnuts)

Method –
Sieve together flour, chocolate, baking powder and salt and mix well.

In a different bowl, mix butter and sugar. Add this to the flour mixture and mix well. Add eggs and milk and mix.

Once the batter is semi smooth add vanilla essence and oil and mix till batter is extremely smooth. Add nuts and fold them in with a spoon.

Grease and flour a 9/13 inch pan. Pre- heat oven to 350F. Pour in batter and bake for 40minutes.

Turn off oven. Remove pan after 5 minutes. Wait for cake to cool and remove from pan.

Frost if needed.
